
Jumbo Tavern Wings at The Town Tavern Copley come three ways — traditional, hand-breaded boneless, or five vegan wings — and every one of them goes into the same board of more than a dozen house sauces plus Cajun and Jerk dry rubs. Order at 125 Montrose W Ave or on Toast.
The wing itself is one decision and the sauce is the other, and at Copley the second list is much longer than the first. Read the sauces before you read anything else.
There are three ways into this section. Traditional jumbo wings, which is the default and the reason the word jumbo is on the menu. Hand-breaded boneless, which take sauce differently — the breading holds it rather than letting it run — and are the pick for anyone who does not want to commit to a pile of bones. And five vegan wings, tossed in any of the same signature sauces, which is a genuine option rather than a token line at the bottom of the page.
The sauce board is the real menu here, and it is worth naming in full: Tavern Hot, Buffalo, Sweet Heat, Thai Chili, Carolina Tangy Gold, Teriyaki, Honey BBQ, Spicy Garlic, Garlic Parm, Jack Daniel's BBQ and Mike's Hot Honey. Then two dry rubs, Cajun and Jerk, for the people who want heat and spice without anything wet on their hands.
Those eleven-plus sauces are not variations on one idea. Carolina Tangy Gold is a mustard-forward Southern style and behaves nothing like Buffalo. Thai Chili brings sweetness and a slow build. Garlic Parm is the mild one that everybody's table ends up ordering as the second basket. Mike's Hot Honey does the sweet-then-hot thing that has quietly taken over Ohio wing menus. Sweet Heat splits the difference for a table that cannot agree.
The move, if you are more than two people, is to order across the board rather than down it. One basket of Tavern Hot for the person who will claim it is not hot, one Garlic Parm for balance, one Mike's Hot Honey to be the surprise, and a Cajun rub for the one who does not want sauce on their shirt. That is a better afternoon than four baskets of the same thing.
What to put next to them matters too. Truffle fries with shaved parmesan, roasted garlic and rosemary are the grown-up side. A giant Bavarian pretzel with stadium mustard, honey mustard and spicy aioli buys you time before the wings land. Candied bacon and onion dip with four cheeses and chipotle is the one that disappears fastest. If you want something cold and sharp against the heat, the signature tavern salad with heirloom tomatoes and red onion does the job.
It is worth saying what this kitchen is, because it changes how you read a wing menu. The same crew roasts marrow bones for The Butcher's Gold, hand-cuts a 12 oz strip steak, plates cedar plank Faroe Island salmon with citrus herb butter, and hand-breads a perch basket. The wings are not the ceiling of the kitchen's ambition; they are the section that ambition has been pointed at for years.
Copley's wings are the same wings printed for the Uniontown room, so if Town Park Blvd is the closer drive you are not compromising. What differs is the neighborhood around the table, not the sauce on the wing.
One practical thing about ordering wings for a table: decide the heat ladder before you decide the quantity. Two baskets at the top of the range and nothing mild leaves somebody drinking water all afternoon, and four baskets of mild leaves the table feeling short-changed. A spread from Garlic Parm up through Sweet Heat to Tavern Hot keeps everybody eating from every basket, which is the point of ordering together.

Timing matters more with wings than with almost anything else on the menu. If you are collecting, order for a pickup time rather than as soon as possible, and take them straight home. Ten minutes in a car is fine; twenty minutes and a supermarket stop is not.
Wings are available whenever the room is, which is 11am to 2:30am Monday to Friday and 9am to 2:30am on Saturday and Sunday. There is no separate wing window and no cut-off before closing.
Late is the underrated slot. A basket of Tavern Hot at half past midnight in a room that still has two hours to run is a specific Ohio pleasure, and Montrose does not offer many alternatives at that hour.
