Montrose W Ave is a busy piece of road, and a tavern on it has to be a place people choose rather than drift into. Copley does that with a kitchen that refuses to treat pub food as a lesser category. The Butcher's Gold is two roasted beef marrow bones, caramelized and spoon-soft, with steak butter, arugula and crostinis — an appetizer that would be at home on a much stiffer menu, listed above a bowl of truffle fries.
The wing program is the heart of the thing. Jumbo Tavern Wings come traditional or hand-breaded boneless, plus five vegan wings that go into the same sauces, and the sauce board runs past a dozen: Tavern Hot, Buffalo, Sweet Heat, Thai Chili, Carolina Tangy Gold, Teriyaki, Honey BBQ, Spicy Garlic, Garlic Parm, Jack Daniel's BBQ, Mike's Hot Honey, and Cajun and Jerk rubs if you want heat without sauce.
The burgers are prime and they are built, not assembled — the Queso Royale is a double smash with thick-cut bacon and cheddar sitting in warm queso blanco, and the Ring of Fire stacks pepper jack, giardiniera relish, jalapeños, an onion ring and garlic mayo. Then the room changes register entirely for the entrées: an 8 oz filet, a hand-cut 12 oz strip, a double-cut pork chop with pork-belly brussels and maple bourbon demi.
What people remember about Copley, though, is the fish. Cedar plank Faroe Island salmon with citrus herb butter. Chargrilled fresh-caught walleye. Creole catfish over Cajun dirty rice with Louisiana butter. A crispy perch basket, hand-breaded, with coleslaw and tartar. It is a Great Lakes menu hiding behind a tavern door on Montrose.
None of that stops it being a bar. There is a long counter, there are stools, and there are people who come in for one drink and stay for three because the room is easy to be in. The trick Copley pulls is that the person eating a filet and the person eating wings at the bar are having equally correct evenings, at the same address, on the same night.
Copley keeps two Toast links of its own: a reservations page for booking a table and an online ordering storefront for takeout. Both are filed under the Montrose name, and both show the current list, which is the reason to start there rather than from a printed page.
The phone, (234) 466-0227, rings in the building. Use it when you want something the form cannot handle — a bigger table, a question about the night, a sauce request for a takeout order. If you are feeding a group, read the Copley menu first so you can name the dishes, then call.
Collection is the underrated option on a weeknight. The Toast storefront gives you a time before you leave the house, and a perch basket or a Philly travels the length of Montrose perfectly well if you are not dawdling with it.
Monday to Friday the doors open at 11am, which makes Copley a straightforward lunch as well as a long evening. On Saturday and Sunday they open at 9am — the earliest hour this room keeps all week, and a genuinely quiet time to be in it.
Every night ends at 2:30am. That is the fact that shapes the room: an early table is never rushed, and a late arrival is never the last order of the day. Holidays can move things, so ring Copley rather than assuming.
